GF Broccoli and Mini Meatball Pasta

Mini GF Meatballs with Broccoli and Garlic Butter Pasta. Ridiculously Good!

Ingredients:


Meatballs:


1 LB Ground Beef

1 Egg

1/3 Cup Almond Flour

1 Scallion (Finely Sliced)

1 tsp Salt

1/2 tsp Worchester Sauce

1/8 tsp Pepper

1/2 tsp Garlic Powder

1/4 tsp Onion Powder

1/4 tsp Italian Seasoning


Garlic Butter Sauce: (Liquid Gold)


4 tbsp Butter (Unsalted)

4-5 Cloves Garlic (Minced)

1 tbsp Olive Oil

1/2 tsp Dried Parsley

1/4 tsp Salt

1/4 tsp Garlic Powder


Pasta:


2 Boxes Gluten Free Barilla Penne Pasta

2 tbsp Kosher Salt

1 Head Broccoli (Chopped into bite  size Pieces)  


Directions: 


To make the meatballs, Beat egg and then add all seasonings, almond flour and scallions and mix, add the ground beef and fold, don't over mix but mix well. Roll mixture into bite size meatballs. In a cast iron pan, fry prepared meatballs in avocado oil until browned on all sides. (This makes 50 little meatballs, so it usually takes 3 batches) After Frying set aside and make second and third batch. Set aside. Keep pan and juices you will add broccoli later.


When you are on the third batch start the water for the pasta and broccoli (Big Pot) and prepare the liquid gold.


The liquid Gold


Mince Garlic and add to a microwave safe bowl add 4 tbsp butter and place in microwave for 30 sec to a minute depending on if butter is at room temp or from ridge. Once Melted, add garlic powder, parsley, salt and olive oil. 

stir and let marinate. (The smell is fabulous!)


Water should be boiling, add Kosher salt and Chopped Broccoli and cook for 5 minutes or until tender. Once Broccoli is cooked to your liking remove from boiling water with spider strainer and add back to the pan you cooked the meatballs in, stir and season. Add The cooked meatballs to broccoli and let simmer on low until pasta is ready. Add 2 boxes GF Barilla Pasta to water you cooked broccoli in and cook until al dente. Once pasta is cooked drain, reserving 1/2 cup pasta water. 


Add strained pasta back to pot and add the liquid gold and mix, finally add the meatball and broccoli mixture (with all the juices) to pasta and mix. Add reserved pasta water as needed. Top with Parmesan Cheese. Season to taste. Enjoy!
