Ingredients:
1/2 Head White Cabbage (Sliced Thinly)
1/2 Head Red Cabbage (Sliced Thinly)
2 Scallions (Sliced Thinly)
1 Cup Shredded Carrot
1 Red Bell Pepper (Sliced Thinly)
2 tbsp Fresh Cilantro (Minced)
Toasted and Black Sesame Seeds
For the Dressing:
2 Heaping tbsp Creamy Peanut Butter
2 tbsp Honey
2 tbsp Rice Wine Vinegar
2 tsp Soy Sauce
2 tbsp Filtered Water
1 tsp Sesame Oil
2 Cloved of Garlic (Grated)
1/4- 1/2 tsp Grated Ginger (Depends on your tastes)
Salt and Pepper to taste
Red Pepper Flakes (Optional)
Directions:
To make the salad, chop all veggies and place in serving bowl. Make the dressing by adding all ingredients to a mason jar fitted with lid and shake. Pour dressing over veggies and toss, to with fresh cilantro and sesame seeds. Enjoy
You can also add chopped peanuts. To make it a meal, add grilled chicken.
